eBay will mark an item as sold when a buyer makes a purchase on the eBay platform. If you sold to a buyer outside of eBay, you will need to end to listing.

Well, normally and as you already know when someone pays for an item eBay automatically moves it to the Sold file.
There is no choice on the Active list for selecting Sold. It has to be the result of a transaction even if you are doing Local Pick up, the Buyer has to commit to either win an auction, respond to an offer or commit to purchase even if the item is set for Local Pick up - cash at pick up. Then, when the item is in the Awaiting payment file you can mark it paid for there AFTER the Buyer pays you cash and takes the item.
