I wanted to use ShipCover, but I have no idea how to have the insurance charged to the buyer and it show up on their invoice/packing slip when I am initially listing the item on eBay.

I’m sorry, but sellers aren’t allowed to add on the cost of insurance to the buyer after they’ve purchased the item.
If a seller wants the buyer to pay for insurance … they would have to fold the cost into the price of the item or handling cost at the time they list the item.

But when I entered a handling fee into the box on the listing, the fee wasn't included in the final total, and I was wondering what I did wrong, Any idea?

I don’t sell, but I believe you have to find out the cost of insurance prior to listing the item … and then add that amount to handling or to the item cost.

You can't do that directly, you have to roll it into the purchase price. Insurance is for the seller. The buyer doesn't need to buy insurance, the buyer has eBay's Money Back Guarantee.
