It always appears for me no matter what I list, it may depend on the listing tool you are using - do you know if it's the Quick tool or another one?
Even if you can select it and it sells, make sure you will be able to print the Standard Envelope label with that category you're using - eBay is very strict on the categories for this label service.

Your MetaZoo Cryptid Nation cards are listed in TOYS & HOBBIES. I believe you should be able to select the ebay standard envelope if listed in a COLLECTIBLES category, but not sure if MetaZoo Cryptid Nation is eligible.
