Trying to sell a large item with freight shipping. The interested buyer cannot finish the purchase through ebay due to shipping not being set up?? I can't find anywhere that explains how to set up freight shipping to be able to invoice the customer after they purchase the item.

@stsap These items should be Local Pick Up Only. I recommend revising the listings and changing it to Local Pick Up Only. Freight is going to be very expensive AND you would have to pay the EXPENSIVE return shipping if the buyer files a not as described return request. The eBay Money Back Guarantee overrules your no returns policy.
Put a note in the description that the buyer can arrange their own freight pick up
.
When the buyer arranges freight shipping you are not responsible if the item is lost or damaged in shipping AND you don't have to worry about VERY expensive return shipping costs.
Selling with local pick up:
https://www.ebay.com/help/selling/shipping-items/setting-shipping-options/local-pickup?id=4181&st=1
Scan the QR code or enter the 6 digit code into the app when the buyer OR shipping company picks up the item so you have proof of delivery.
If you still wish to offer freight shipping then you will need to use the Advanced Listing Tool located in Seller Hub on a computer
You can read more about freight shipping and flat rate vs rate tables here: https://pages.ebay.com/seller-center/shipping/freight-shipping.html
Let me know if you still wish to set up Freight Shipping and I can explain the steps in more detail
