The Memorial week sales tax holiday was enacted only last Friday. eBay would be hard-pressed to put it into action this quickly. It looks like quite a sprawl of categories as well. eBay will tax based on the category, so an item in the wrong category will not be exempted.

You can test eBay's preparedness by finding an item covered by one of the Florida tax-free events (within the price limit), making sure it is listed in a qualifying category, and then place it in your cart without purchasing. When viewed on the checkout screen, you should be able to see if tax was applied.
