My customer has paid for an item, but she has requested a five day shipping delay. I have next day shipping. How can I avoid a late shipping ding?

You can absolutely accommodate your buyer’s request for a delayed shipment without getting a late shipment defect — here’s how:
1. Purchase the shipping label now (this satisfies eBay's requirement for uploading tracking within your stated handling time).
2. Hold the package and drop it off 5–6 days later, as requested by your customer.
3. USPS labels remain valid for up to 28 days, but it’s best to ship within a week to avoid any issues at the counter or with scans.Just be sure the tracking shows acceptance when you actually drop it off — eBay uses that scan to measure on-time shipping, not just when you create the label.
You're doing the right thing by communicating clearly with your buyer.
Actually this information is INCORRECT. eBay expects the carrier to SCAN the shipping label tracking WITHIN THE HANDLING TIME in order to avoid a late shipping defect. @marsaun-4773 Do NOT take this advice because it is incorrect, you need to follow the advice given to you by @comics-scifi-collectibles

@marsaun-4773 I want to clarify that printing a shipping label will not protect you from a late shipment defect if you don't have your tracking SCANNED in within your stated handling time.
What I do if asked by a buyer is offer them a choice.....
1. Advise them to have the post office hold their mail. This is what I do when I am out of town.
2. Cancel the sale as buyer requested ( if they ask) refund the buyer. Then relist when they are back in town.
I know that these are extra steps but they are the only way to prevent a late shipment defect on your account.
