Listed a card for authenticity and came back as authentic but condition of card doesn’t match. I listed it as Mint-NM and it didn’t meet that standard. Would listing the cards as excellent be a better option to avoid delays?

What delays? None of the cards you have listed have the Authenticity Guarantee on them.
