@do-all-1 There really is no easy way to do this.
The only thing that MIGHT work is if you download the listings using file change and sort them in excel then upload the listings again. @shipscript Would this work? If they do this then how would it affect store categories?

Active listings can be sorted in alphabetical order within Seller Hub. Click the heading for the Title in the Seller Hub Active Listings "grid". The lists will then display in title order within your Seller Hub.
If you want your customer to see items in alphabetical order, there is no such option. Some sellers have attempted to list items in order within one spreadsheet upload, but the processing is asynchronous, which means eBay puts each record in its own processing queue and it really depends on the length of time it spends in its own processing queue and if the item ahead of it is taking longer than usual.
The closest method to uploading a series of items that you want displayed in aphabetic order, when sorting by newest first or ending soonest, is to schedule each of the listings to start a few minutes apart.
I don't know of any revision process that can rearrange listings, except for variation listings, where the master record can be rearranged in a revision to change the droplist order.
