A watch I'm selling using eBay's Authenticity Guarantee recently sold and funds are pending. Shortly after the offer was accepted, the buyer contacted me asking if I could ship to a certain address. I replied that I am only shipping to the authenticator who will then ship to the buyer's address on file. They asked for the authenticator's contact info so they could change the address but I indicated that I did not have that info.
This make me uncomfortable sending the watch to the authenticator now. Will it be fine as long as I do my part and get it to the authenticator? Is that the end of my responsibility? I don't want to end up without the watch or payment.

If you haven't shipped to the authenticator yet, you can cancel the order using the reason that there is an issue with the address. Then relist so the buyer can repurchase with the correct address.
This way, the authenticator will ship to the correct address after authentication.

After a little back and forth with the buyer, they changed their address in their account which made me feel comfortable shipping the watch out today.

Changing their address in their account will not solve the problem. The watch will be sent to the address on their payment by the authenticators - not to the address on their account.
The correct course of action would be to follow the cancellation advice I gave you so they can repurchase with the correct address.
If you already shipped, the authenticators will ship to the old address and the buyer will have to figure out how to retrieve it unless the occupants either refuse the package or decide to just keep the watch for themselves.

I already dropped the package off at the post office thinking things were resolved. I told the buyer numerous times that the authenticator would ship to the address on record so the ball's now in the buyer's court.
Could I be at any risk at this point in the transaction?

I think you are OK as far as seller protection is concerned (meaning you won't likely have to refund when the package is shipped by the authenticators to to the address the buyer provided), but you may receive negative feedback you don't want because you went ahead and shipped anyway, knowing that the buyer wouldn't receive the package at the desired address.
If you do receive negative feedback, you may be able to have it removed, but that might be a long shot.
