Hello, I have a buyer who has already checked out with their purchase. They messaged me and requested a later shipping date for their item. I offer 2 day shipping with all items. So Im not sure how to change this for buyer, without it affecting the policy agreement.

You are required to ship within your stated handling time. You can't change that after the sale.
If the buyer has not paid yet, advise him not to pay until it's time to ship. (Make sure you don't have the unpaid item assistant turned on - the switch should be white, not blue for "off.")
If the buyer HAS paid, cancel the transaction using the reason that the buyer requested the cancellation, and advise the buyer that you will relist when he gets back so that he can repurchase the item. You'll find the cancellation option in the dropdown next to the transaction in your orders list.
