How do I establish an automatic response after a customer purchases an item from my store? I know it's possible because I've received one from different sellers in the past.

eBay will automatically send a few different messages to buyers:

https://www.ebay.com/cnt/ManageBuyerCommunication

Anything beyond those standard messages would have been created by the seller's server program to utilize eBay's API programming interface.
