I have a buyer claiming I sold a damaged pokemon sapphire when I know for sure I sent a pokemon leaf green how can I resolve this?

-You cannot prove or disprove the Buyer's statement and eBay will honor their statement and a return claim using the reason "does not match pictures or description". This mean eBay will charge you for a return shipping label and you will have to refund in full once you get the package back.
-You No returns accepted setting is meaningless in this and several other situations, you should learn that now as a new Seller. If you fight the return eBay will side with the Buyer, let them keep the item and refund from your account.
-For the future you should consider Accepting returns and learn about eBay Seller protections that may apply in certain situations on returns. Seller protections | eBay

So basically I'm getting scammed and ebay is taking their side.

How can you keep this from happening again? This is a common problem I find on your platform and you are just going to ignore my problem. I am going somewhere else to sell.

Actually, I am not an eBay employee nor are other Mentors here. We are volunteer Buyers and Sellers who assist other members using the eBay venue. Some items are just scam targets regardless of who is selling them. A good number of Buyers know the ins and outs of how eBay works and take advantage of new Sellers. The No returns accepted policy may not be your choice because eBay has it as a default on their listings tools so Sellers "think" that is the standard.
On three accounts here we have shipped over 10,000 items over a 10 year period with a very, very low % of attempted scams. But then our items were typically not scammed items.

I've sold 4 items on ebay and have been scammed on 2 of them. I shouldn't have to be aware of the potential risks of particular items to sell on a platform. There needs to be something in place for sellers so they won't get scammed.

The best way to protect yourself in an "Item not as described" case is to require the buyer to return the item and provide the prepaid return label. You are not charged for the label until it is scanned by the USPS and you do not have to refund until the item has been returned and inspected by you. Do not just refund the buyer and expect them to return the item. Most scammers when confronted by this requirement will not follow through since you are making them return the item to get their money back.
