Im not sure if this is the correct forum for this question so I apologize if not. I purchased an item with the assumption it would be shipped within the time frame the seller had posted, then I noticed after the purchase that the seller edited the listing and changed the date much later than I am willing to wait. My question is: do I have any recourse in this matter? Is the seller bound to the original date for shipping? Also is there a way to view the listing as it was at the time of purchase, because when I view the purchase details it does not show the shipping date as it was.

I explained in a letter that if they know the item will not be shipped by the date stated at purchase that I would like them to cancel the order and if they feel that the item will be shipped as promised, to disregard the letter. Unfortunately, still no response. As you questioned about seller feedback, I did look at the time of purchase to see if any negs, and there were none but, they had very few feedbacks (15) and all the ones I saw were within the past two or three months. I just double checked and now there are 2 negs within the past week, one for a item that they no longer had stock of and one for INR. So now Im 95% certain that I made a mistake in making this purchase.
I will most likely be filing a INR on the 29th. Any tips on how I should handle this matter will be very much appreciated.

You can't open the claim until the day after the last estimated delivery date so on Dec. 30th. Just follow the info that ebay gives you and if you don't get a refund by the time that ebay says they will step in, ask them to step in. There's no need for any explanations in the claim, just that you want a refund as the item hasn't arrived.
Do not close the claim until you are refunded.
