eBay's effort to curb the abuse of Media Mail is crudely based on the main category that an item is listed in. If you list a cookbook in Collectibles, you won't be offered Media Mail postage when you purchase your shipping label, but you can buy it (for the same prices as you'd pay eBay) at your local Post Office or through www.PayPal.com/shipnow

If you are talking about the Culinary Arts cookbook, that was listed in the kitchen gadgets category.  Ebay, in an attempt to curb misuse of media mail, is not allowing Media Mail for most categories and, since gadgets are not eligible for Media Mail, your shipping was automatically changed.

You should have either listed the item in a book category or else gone to the post office to ship the book Media Mail.   You could also use www.paypal.com/shipnow to buy your Media Mail labels.
