So basically I sold an item and it is to some guy in Israel and the eBay app is telling me “destination country not supported, go to the eBay website to purchase shipping label” but I cannot find where to purchase the label on the website at.

Has the buyer paid?

If you had no international option on the listing you are free to cancel the transaction for an address you don't ship to.

If it's the Sony Play Station, the listing does show international shipping to Israel at a price of $73 for "eBay International Standard Delivery." 

If you go to the order, there should be a "print shipping label" button.
