Looking to ship this, should I break it down? or just find a big box and throw it in as it is?

Depends on how you worded the ad and what your buyer is expecting. Is the buyer prepared that some assembly is required? If not, and it comes in pieces, how do you know the buyer can put it together? And not make a complaint that the item is not as described or pictured? Have you considered contacting the buyer to ask them? I'd wrap it and pack it to the max with a double box and extra padding. You can't just "throw it in" - you are responsible to be sure it arrives safely. It's going to expensive, be prepared. Remember that you cannot request more money to cover shipping than what has already been paid. Don't forget tracking. Congrats on the sale and good luck.

Wrap it in bubble wrap and place in a sturdy box. Double box it you can. Ask the buyer before taking it apart if you want to send it that way.

It's Fisher Price, that's usually fairly sturdy stuff. I would bubble wrap and secure the loose parts, put it all in a box with good padding and insure for full value and out the door with it. Cutting out cardboard to use to keep it from moving around too much may help, for instance a sheet cut so it slips down over the top a few inches.

Shipping will be outrageous. I've found you can get just as much for selling the parts and pieces as for the entire set, that is where the value is.

If the item is not sold, then breaking it down to fit inside as small a package as possible is the way to go. I don't usually pack stuff that's not sold but with this I might do that just to have a certain size and weight for the shipping calculator.

Take a moment to think about this — would you be pleased with a seller who “just finds a big box and throw[s] it in as it is”?
That question asked, “just find[ing] a big box and throw[ing] it in as is” would, most likely result in damage to the castle and your dealing with a case for an item-not-as-described.
So, moving parts should be taped-down and all individual parts should be carefully wrapped in bubble wrap before all parts are carefully placed in a sufficiently-large, tape-reinforced, strong box which has been padded with bubble wrap. Keep in mind that it is your responsibility as the seller to make sure that the item is received as-described and as-pictured by the buyer.

I can't find the listing to see how you have the s/h listed. BUT!!! this should have been looked into BEFORE you listed.
Everything I list has the cost of mailers and postage factored into my starting price (free shipping). If I am using the calculator it has the mailer factored in and exact weight and measurements entered into the calculator.
Everything save records books and the like (often bought in multibles) gets preboxed that way I have accurate weight and measurements, and placed on the shelves. When sold I print packing slip, label seal the box and its ready to ship in minutes.
