As soon I was going to print out the label Ebay gave me this weird option to change the buyer address because it was incorrect I thought nothing of it because they know what they're doing. the package left the post office in my state & it'll take 5-7 days to get to the right address but to the wrong township. how can I fix this?

Essentially you can not. The only options are to issue a recall (extra fees apply) or let it go. If the address is undeliverable it will be returned to you.
BUT in the mean time go to usps.com and select "find zip code". Then on the screen that comes up enter ONLY the ZIP code. Sometimes it will show a preferred name along with some other acceptable names.
For example, if I send a package to Stoneham Mass 02180 it will get delivered. It is a town about 10 miles north of the City of Boston. BUT because it is served by the main Boston central sorting facility, if I address it as Boston 02180 it will also get there even though the address is "wrong".

Contact USPS right away and recall the package is about all you can do. Be sure to let the buyer know what is going on.

A USPS Package Intercept costs 17.50 plus the return postage ... then postage again to ship to the customer. Not worth it for the $40 shoes that he sold.
If the zip code, street, and buyer name are correct ... and the postal workers are not in a bad mood ... the package will probably get to its correct destination, despite having the incorrect town name. That is what I would count on.

Name, state, & address is correct. The buyer entered the wrong zip-code and I know nobody in their right mind is driving 6 hrs and 45 minutes to pick up shoes. The best solution is probably the Intercept. Should've I buy it or convince the buyer to?

Then it should get properly delivered with a delay. If you look at this page on the USPS site, which talks about a situation where the Zip does not match the address:
ZIP Code™ or ZIP+4® does not match City/State.
The U.S Postal Service® dispatches mail sent in this manner to the Post Office indicated by the ZIP Code for possible delivery. If undeliverable there, it is forwarded to the Post Office as stated by city and state.

you don't.
It either comes back or gets delivered.
If it comes back, come back here.
