When I list an item and offer discounts when buyers buy more of the same item will the shipping cost automatically “adjust” and increase as more items weigh more? If not, what is the easiest way to make sure that shipping cost increases commensurately and automatically?
Looking forward to a practical solution to this rather simple question!

Shipping cost does NOT adjust automatically. When you create listing you need to enter shipping as "flat price" and extra fee for additional items purchased.
EXAMPLE: Shipping $10 ($4 for each extra item).

Whenever you are selling multiples of an item there will be a second box for you to enter the shipping cost of additional items. You need to calculate the additional weight and associated cost. Just remember when the combined weight exceeds the weight class you have to adjust. For example, if the item you are selling is 3 ounces you might be able to sell five before you hit one pound. However, if your item is 9 ounces 2 of them will exceed the 15.99 ounces for First Class Mail and now the shipping weight is 2 pounds as you have to round up.
