Could someone please explain how we can now change the shipping date on labels printed through Ebay. Sometimes, I package and print labels to ship the next day. There must be a way but I am not seeing it. Thanks for any help you can provide.

On the Shipping label form, the "Ship on" date showing on-screen (lower middle of the screen, just above the carrier/method pricing choices) has a pulldown menu Down Arrow next to the date. Click that, and you will get a short list of upcoming dates to choose from.

You can't change the date for an already purchased label. Best you can do is ask for it to be voided and then purchase a second one as per @a_c_green's instructions above.
That said, I really wish eBay wouldn't default to current date in the label printing dialog. It seems to be based on Pacific Time and doesn't take into account whether or not that's the time zone the seller is in or whether or not the Post Office is likely to be open at that time of day. Even knowing this, I've forgotten to change the date and had a label issued for current day at 7:00 pm in my time zone - long after the P.O. is closed.
A better solution would be to ask the seller to choose the date each and every time. Or allow us to set a default shipping date of "tomorrow" in our preferences.

Well apparently Usps knows better than us and that can easily be changed on our end bc I just got the lecture. I made the mistake of printing a label on Saturday night for something I was dropping off Monday. I did it for two packages. I wasn’t trying to scam my customers. They are intelligent enough to know when I provide a tracking number 5 minutes after purchase on the weekend at 8pm it’s not en route. I thought I was being proactive and communicating. I brought one in Usps and was scolded but she took it. I told them I did it to one I just put in the box and they shrugged their shoulders. I just received the package back today for sending on a null date. They implied i was trying to pull the wool over my customers eyes. I also was advised I need to change the zip code on the top if I want to use their Usps store again. In eBay when I choose store based on my location this store comes up first. BUT They said I’m basically giving credit to a store and they base their employment on the amount of packages…. Then they send my package back to me. So in theory, if I drop off a package in the box the same date, that’s not okay if they don’t check the box until the next day? What diff does it make if the whole tracking system shows when they receive it. Well would if I post date it and they check the box that day will they consider that a null dare? Who actually thinks a carrier is holding up their package when it says Usps is awaiting the package and it hasn’t been scanned on a Saturday night? I worked using ups and fedex labels for years at my previous job. Never a problem with dates. If they didn’t scan it, its not their problem. They didn’t act like a bunch of victims to their customers.
the other store idk even know where to begin. Sometimes they are closed for days bc they have fiber internet that goes down hard. If you don’t see the sign on the door and dropped something off those days, were those returned for bill dates. GP I don’t mean to sounds so ignorant or negative and I’m certainly not trying to fool people or cause a whole Usps store to lay off their employees bc of the zip that preprint on my label. So I get to cross a four lane highway, further away until I can figure that one out. The reviews on the stores are incredible in a 2 star kinda way. But I want to understand where they are coming from and i do truly want to do it right.

I don’t see one. It does if you print them in bulk but not to print a single label. Very frustrating.

Afaik there is no rule that a label has to be dated for the same day that it is mailed although some postal clerks may think that there is. It sounds as if they didn't want to mail your package because of the zip code and that they wouldn't get credit for mailing it but I don't believe that is correct either. Posters here have said that the post office that processes a package gets credit for it, regardless of the zip code.
Perhaps @wastingtime101 could confirm if I'm right or not?

If I experienced what @donsqui-0 did I would not use that post office again if I had a nearby alternative. Sounds like they have sticks up their butts.
Date on label really doesn't matter. The only time it would make a difference is if you bought the label with a Saturday ship date, price change goes into effect on Sunday, then you mail the package on Monday.
I have heard that some tiny rural POs inspect every detail like date and that sounds what's happening to donsqui-0. Saying the seller is trying to pull the wool over their customers' eyes is pure bull. Buyers do not have visibility to the date on the label until the package is physically in their hand and they can see the label. If the seller purchased a label on Monday then shipped Wednesday, eBay is still going to alert the buyer on Monday that the package is "being shipped" or whatever language they use on Monday. They will not wait until Wednesday to send that message, regardless of the date on the label.
As for the ship from zip on the label vs the drop off zip - as long as the first 3 digits are the same, then you're in the same zone, and it doesn't matter if the zip on the label matches the zip of the accepting PO.
As far as I know it's the PO that does the physical acceptance scan that gets 'credit' @pjcdn2005 , regardless of the ship from zip on the label. Here's an old discussion from 2021, but goes into the topic (link).
