When I calculate shipping I see its higher the further the customer is. The shipping doesn't auto recalculate so I set all my products shipping as if they're going to Cali so that the shipping is always covered. If i set the shipping as if its going to New York but it turns out being much further away how would i adjust that shipping because my shipping prices are thus too high scaring away customers.

Calculated shipping works as it is intended. With USPS they charge by the zone the farther away a package needs to travel to its destination the more it will cost.
There's no getting away from that.
You're selling mostly media so you can use Media Mail which starts at $ 4.63 for up to a pound. Media mail cost doesn't change zone wise only weight will change the cost.
If you're using Ground Advantage then yes, the cost of shipping does go up for different zones as well as size and weight of the package.

If you use calculated shipping where the buyer pays for shipping separately and enter correct weights and dimensions when creating the listing, you won't lose any money on shipping labels.
In your Shipping Preferences, you will find Shipping discount settings. There you can opt to allow the buyer to receive the eBay discounted rates. Or, you can also choose to keep the discounted rate difference for yourself.

You can set up your listings so that the postage DOES automatically show the cost from your ZIP Code to the ZIP Code of any member who looks at your listing. You just choose "Calculated shipping" when setting up the listing: enter accurate package weight and dimensions, choose which shipping service(s) to offer, and eBay will automatically do the rest. You don't have to look up any postage prices yourself, at all.
