Question please if I have a set of plates and I want to let the buyer purchase only one 
at a certain price or all of them at a cheaper price how can this be done technically
in the same listing?

Why would you want to break up the set?  I'd say sell him the set and he can keep the one he wants and dispose of the rest as he wishes, but he pays for the whole set.

You can list them all at one price or each at one price.  You cannot do what you want to do.

 You would also have to deal with getting the correct shipping set up. While one or two plates might not be too costly, sending the whole set, the cost could jump considerably, esp if the shipping box was over 1728 (about 12x12x12) cubic inches to pack them safely.
