I’m a new seller to eBay and have sold a few items but now want to list an item that may exceed my seller limits. My question is, what if the auction does exceed my limits? Is the sale voided by eBay? Exceeding seller limits via an auction route through no fault of the seller seems counterproductive to all parties involved. How does eBay police this limit? I could see that this may happen a lot.

It's a listing limit. It's OK if the bidding goes over that. However, you might not be allowed to set up new listings if your total is ver the limit.
