Multiple same item: Set the quantity to how many you have for sale.
Multiple different items: Make a "variations" listing. It's pretty easy to do/figure out.
First select how many variations you want. Let's say 5 for example.
Then what you want to call the variations. let's say small, medium, large, XL, 2XL -or- red, blue, green, white, yellow for example.
The rest is pretty much self-explanatory. Come back to the boards if you need help.

If you don't see the option for variations on the sell your item form, then they probably aren't allowed in that category. If you are thinking of setting up different sport cards on the same listing...it seems to me that some people had problems with ebay when they did that as different cards weren't considered as being true variations. But...I'm not certain on that.

Near the top of the tutorial page is also a list of external resources. I find the photo compositor very helpful for setting up the gallery photos.
