I used to wait to give feedback until a day or two after the buyer received the item.
EBay no longer shows the date they received the item.
I am hesitant to leave feedback until i know there is not an issue.
This is a bad change on EBay's part to not show the date!

I don't know why you can't see the delivery date for items you shipped. I can see them just fine in my seller hub Manage paid and shipped orders.
As for feedback why the hesitation? I have my feedback set to automatically give buyers feedback as soon as they pay. You can set yours to automatically send feedback when buyers pay or when they leave you feedback

More than half my items don't have tracking so I only know when it is received if I get feedback.
Anything cheap I give feedback immediately before I get it. Not a big deal.
Most of the buyers who buy cheapie items leave feedback.
Those with high-end purchases don't always leave feedback or never leave feedback and I don't leave it until I get it first from these buyers.

just leave feedback because if there is an issue you can't leave anything but positive rating anyhow

You've sold 11k items, which is a LOT more than I've sold.
I guess it makes sense you're too busy selling to look at your Manage All Orders page?

Always left buyer FB when they paid for the item and I bought the shipping label - the buyer did their part even if they were late in paying - some people only get paid once per month e.g. military personal, teachers, full commissioned sales people etc. If there is an issue (real or imagined), it is more than likely falls in the seller's ball park e.g. not as described, damaged in shipment, wrong size, not authentic, shipped late, etc.
Empathy is an essential trait of any good sales person.
Why hold all your buyers hostage because of the few issues that may arise? Doesn't seem Kosher from here.
FB used to be a seller performance metric - hasn't been worth even a Yankee Dime for some time now.
There always have been buyers that will lie a little, cheat a little but be real sincere about it.

One more thing - seems like a waste of time to go back and find those items that have been delivered + 2 days (a couple in my boo) later - especially when a buyer FB is strictly positive or they receive non at all.
Personally I left FB for 100% of the items I shipped - in return I received FB on 65+% of my shipment - that is a good trade off me thinks.
PS: I quite selling on eBay or any other site almost 3 years ago - my trade off was spending more time with my 5.7 y.o. grandson aka free day care in exchange for joy for him and MeMaw and Pa Pa - Thank God For Kids
