I'm getting alot of buyers saying that I'm telling them (When really it's ebay's generated ETA) that they bought yesterday and the ETA to them is 12/22. How is ebay doing that? I have 1 day handling, but everything is First Class Mail. Today is 12/19 so when I ship today some First Class mail takes 5 days to arrive right?
Ebay is setting me up for failure and a bunch of potential negative feedbacks.

I just looked at a tshirt that has 26 Dec as the ETA (I'm in MS) Maybe a lot of your buyers are close to you? And I think the estimate for FCM is 3 days, but don't quote me on that.

The shipping time takes the buyer’s zip code into account.

I tell my buyers to go on the carrier's site (USPS, UPS tracking) as it is much more accurate then what you see on ebay.

Are you dropshipping?
Dec. 28 is the last estimated date of delivery to my zip code.
I'm pretty sure the delivery window is not set by eBay.
If you don't sign-out before you check, the system will use your own zip code.

It tells me Dec. 26th too.

This is what they claimed to have seen on the day they purchased. I have no way of confirming that what they saw is correct or if they wre just impatiently mistaken. And they have no way of confirming as well as they don't have screenshots of what they saw. So it's all just based on their word.

First-- they can't open a Dispute until the last estimated date for delivery has passed.
And that is usually a window (Dec 22-26 for example).
It may help to soothe these frantic late shoppers about the window and give them your tracking number so they can see that the purchase is shipped and on its way.
Second-- feedback does not count against your seller account. If someone does leave a neg, you can Respond. For example to a neg claimin late delivery . Response "Mailed 19/12/17 Rec'd 24/12/17" should tell your future customer that the neg leaver was shopping late and got his parcel in time anyway.

If you go to view order details, it should show you the same estimated arrival date that was shown to the buyer when they purchased the item.
