I am listing an item to see if it will sell within a certain period of time, otherwise, I wish to take it down. Since it will be in a fixed price format, will I be charged a final value fee if I take it down? I know that a final value fee can be charged on auction style listings, but what about fixed price listings? Any help is greatly appreciated.

That's for auctions.
For a fixed price item, the only time they might charge you, is if they think you ended the listing to sell it outside of Ebay.
Like if you get a message about the item, then end it, it might look a little odd.

You are only charged FVFs if your item SELLS.

Hi, if you read the link to the policy supplied by the other poster, you will find the following:
“Additional Final Value Fees
You may be charged final value fees if you violate our policy of buying or selling outside of eBay, or we may apply additional final value fees if you are not meeting our performance expectations…”
So to reassure you, there is a only a very slight chance a fixed price listing could be charged a Final Value Fee without a sale, but only likely if there was evidence of an off-eBay sale. Below is the Buy or Sell Off Ebay policy for your perusal.

This is what I meant by final value fee. It says "You may be charged a final value fee based on the amount of the highest bid" should you end the auction style listing early. I just want to be sure that it wont do the same if I end a fixed price listing early.

Well this is NOT the question you started the thread for. You specifically asked about Fixed price listings, see your title. My original answer still remains true for your original statement.
Now if you want to know about Auctions. The answer is different as you found on your own.
I'm confident you are aware that Auction Listings and Fixed Price listings are two different types of listing and therefore have some different rules.

Off Ebay means just that. If you were to close the listing so that you could sell the item to someone and NOT use Ebay to do the transaction. You used Ebay to find the buyer but then when it came time to sell it you closed your listing and sold it directly to that buyer. That is an off Ebay sale and a very big breach to the rules that can get you in a bunch of trouble with Ebay.

Determining if a sale was off-ebay is tough, though, and eBay can only monitor messages to try to link a closed item to a 'possible' off ebay sale.
In reality, though, this is really a vague determination. I end listings constantly (my listings are all fixed price/immediate payment required) and it's no big deal. Often it's to refresh listings, but I list on 3 or 4 different platforms, and if something sells on one platform, I take it down from eBay. No problem, but then I don't have any messages promising someone that I'll take down a listing and sell it to them privately (since I don't do that).
