Last week, I sold two items via Best Offer Accepted to one user. This was on Tuesday, 19 Oct 2021 at 8:29:40PM. On Thursday, I get a message that they will send payment on Friday the 22nd. I did not receive payment, and I sent a reminder via invoice this morning, the 25th. I then receive a message from the buyer stating he found them cheaper, and to cancel the order, to which I would via NPB, since it had been more than the 4 days.
However, when I go to find Non Paying Bidder notices, the listings show he purchased them on 10/25 which does not make sense, unless the clock restarted after I sent the follow up invoices this morning? Has anyone else experienced this?

Was one of the items the 2008 African American Barbie ~ Halloween Treat ~ NIP VHTF AA?
That item didn't sell until October 25. If that's not one of the items, perhaps you clicked on an incorrect sold listing.
I don't see any items that sold for b.o. on October 20, the day you said they were sold.

@albertabrightalberta I had the date wrong, I edited the original post to reflect, as it was actually 19 Oct 2021 at 8:29:40PM

I have had this happen to me couple of times. Most likely this people are re-sellers, and are buying your item without paying, but hoping to get it from some one else at a cheaper price in order for them to make extra money. In my case, I just go ahead and add them to my Buyer Block List.
Good luck on your selling journey.
