Is there any way for me to view the actual shipping label itself?
I know how to find the buyers address on file with ebay but if I made a change to that address,
is there any way to see what the address/label reads AFTER I made the change?

If it has been less than 24 hours, you can reprint the label.

You could go to the Label Management screen and reprint the label for a limited number of days.

I create and save PDF files of my labels. Once in a while, I will look at a label. More often, reprint one because of a coffee spill.

If it's been too long to simply view/reprint the original label itself (as above), you can still find a European version of the address in the emailed confirmation you would have received (in your off-eBay email account) under the Subject line of "Your eBay label is ready."
The message is generated in European style, presumably due to the programmer who originally wrote the code, so the ZIP code is placed in front of the City, and the State is not shown at all, but you can still see the street address; e.g.
John Smith
123 Main Street
98765-4321 Springfield
If you're not sure of the State, you can Google the ZIP code or look it up on the USPS.com website.
