How can I stop items from re- listing after they are sold , I don’t sell multiple quantities, I only sell one item 1 quantity at the time

You may have the "out of stock" setting turned on. Your listings are still live, but no quantity available, cannot be purchased, and will not appear in search.
Turn off the setting here under the multi-quantity listings section:

if you are making any sort of revision to an unsold listing then sometime it saves a copy in your unsold even after you list it
when yo make a half a revision and then close the page or back out of it, it then stores a copy in your drafts .if you have a lot of drafts and dont pay attention and then hit list all you have just listed an item you mave have sold 20-30 days ago .
anytime you make an edit or a revision to an unsold listing it can generate a copy of it and you can overlook it inadvertently and relist it by mistake

I looked at many of the OPs completed listings.
It doesn't look like the OOS option is turned on.
They all have "This listing has ended".
Not sure why the OP is experiencing what they are?

Not sure if it's connected, but there are also multiple threads going right now with people saying eBay randomly increased the quantities in their active listings.
Maybe whatever is causing that issue also caused these items to relist or show quantity available for sale again if the seller has OOS enabled?
