Why doesn't eBay's shipping calculator accept my location?
I am located in Israel, maybe that's why? Furthermore, is it possible to send a product without a tracking number?
The price of a tracking number in the mail exceeds 20 dollars and no one is willing to buy the products I sell for more than 10. On the other hand, I can't sell at a loss. Is it possible to simply offer a refund if the item does not arrive and send a shipping confirmation instead of a tracking number?

There are some inconsistencies here. Are you shipping out of Israel or the US? I looked at several of your listings and they all indicated they are shipping from locations in the US and most are using freight which makes no sense for the item.
If you are shipping from the US you should be using standard shipping in you postings and one of the US based delivery services. For what you are selling USPS would probably be the best and a lot of the items look like they could ship first class which comes with a tracking number. Several of you listings have free shipping but those are also using freight. Example of one of your listings.

A very important rule on Ebay for sellers is the LOCATION you state in your listings. This is ALWAYS suppose to be the ACTUAL location in which the item will ship from. In your listing you have variety of Ship From Locations. You should make sure they are ALL correct as this is a serious violation on Ebay.
Also know that simply stating that it ships from the United states is not good enough unless you can prove to Ebay that you have multiple warehouses you ship from in the United states. If you can not, you need city and state in that location.
If you are saying you are shipping from various locations in the US but are actually shipping from Israel, Ebay will catch up to that and you will be sanctioned for it.
Yes it is possible to ship an item without tracking, it just is NOT advisable to do that. Besides if you are shipping from the US there really is no need to do that. Shipping with tracking is easy and is good for both the buyer and the seller.
It appears from what you have stated here that you have a few errors in your listings that you should first correct as soon as possible so they are accurate before doing anything else so you don't get your Selling account harmed due to rule violations.

It looks like you have fixed the shipping location on your items so that should be good. I am not familiar with your postal/carrier service, or other shipping carrier options, in Israel so I am not sure why the shipping calculator does not recognize your location. That would be a question you would have to ask either eBay or some of the other sellers in your country. If you are not using a method for your shipping this may be why your items are showing the shipping method as freight. As mam98031 stated it is possible to ship items without tracking numbers but it is risky to do so and eBay may, at some point, question this.
It is not something I would advertise in your item description that would be an open scamming invitation. While not as costly as your rates US sellers are facing rapidly increasing shipping rates, both domestic and foreign, as well.

The item you sold on the 7th states you are shipping from the US. NY, New York. Item location misrepresentation is a violation on Ebay. People need to know where their orders are coming from.

You can only use the calculator if you are shipping from the US but you can figure out much out how much to charge and then enter that amount using 'flat rate -same cost regardless of buyers location'. Since you are listing on .com the domestic shipping section is always for shipping to the US. You show that you are using freight but that is for large items or a large quantity of items sent by boat or truck. For shipping to the US your listing should show that you are using 'economy or standard shipping from outside of the US'.
You do not need to use tracking however, if a buyer open an item not received claim, the only way that you can win the claim is if you can show online delivery confirmation. Some sellers who don't use tracking have said that they rarely have that problem though because it takes longer to ship from overseas, your experiences may differ.
