I was given some earrings to sell from a friend. The earrings are worth over 2000 dollars. So they are highly priced. I did some research on selling jewelry.
If you sell something. You can request a signature for delivery. All that's going to do is cover you for the item being delivered.
Problems you have to worry
-Customer saying they got an empty box.
-Customer switching out diamonds with cubic zirconia and returning it back.
-Customer switching out the item with something that looks very similar.
If you don't want to risk selling something or having to go sue a person over fraud. You're probably better off doing pick up in person.
Unless jewelry stores make a service where they'll you mail the item to them and then they authenticate the item. Then have the customer go to that jewelry store to pickup the item. Then you have a third party other witness end to verify.
If your thinking of selling jewelry things to think about.

If it were me, I would give the earrings back to your friend and have her sell them to a local pawn shop. She'll get much more money that way: $500 at the pawn shop vs. zero after being ripped off by an ebay "buyer."

'If your thinking of selling jewelry things to think about.'
If money's involved, you also need to think this is a good way to lose a friend. That's generous of you to take the $2,000 hit to your income taxes. I wouldn't even do that for family.

Number 1 rule as a seller on eBay is to never list anything you cannot afford to take the financial loss on. It is simply too easy for the scammers to rip you off and leave you with no recourse. There are LOT more ways to scam you out of the item than the 3 you listed. Much better ways to sell a $2K pair of earrings.

I agree with everyone else here.
I wouldn't sell a item here for a couple HUNDRED dollars let alone a couple THOUSAND dollars.
Remember...
"Don't sell anything on ebay that you can't afford to lose."

ebay mantra, 'If you can't afford to lose it AND pay to have it done - including postage - don't sell it online'.
There is NO seller protection or guarantee of a happy ending.

So did you return the earrings to your friend? It would have been easier to not accept them in the first place since you realized it was not worth the risk.
