Hello!
I know the recommended pixel size for images is 1600 along longest size. However, I noticed my images take long to load when going through the listing on a phone. Then I compared it to other sellers who use smaller images, although you can't zoom in as much, the pictures instantly loaded (no buffering at all). So I am in the middle, whether to reduce my image size to something like 1000 pixels and have them load faster or to stick with the higher quality images for more detail? What do you recommend or have you tried anything to get the optimum image pixel size to suit your need?

I guess it depends on what you sell. I usually cap mine at about 800-1000 and they look just fine. I would only be concerned if what I was selling is so intricately detailed that I NEEDED the larger size.

Borrowed from shipscript :
Zoom and supersize depend on the size of the original photo you upload to eBay.
If the longest side of your photo is:
under 500 pixels, eBay will reject the photo. A larger photo can be made too small if you crop with eBay's editor.
under 640 pixels (500-639), neither supersize popup nor mouseover zoom is available. The static photo may be displayed as small as 300 pixels.
under 800 pixels (640-799), a supersize popup will be available, but there will be no mouseover zoom.
up to 1600 pixels (800-1600), both supersize and zoom will be available.
over 1600 pixels, eBay will shrink the master image to 1600 pixels and the above will apply.

I make mine all 1050 on the shortest side.
