Is there a way to disclude specific countries as an option. China for instance, I don't want to see any ads from China.

You can't do anything about the ads on ebay. If you are searching in listings, there is a box to check where it will just show listings in the USA or North America. On a computer, it will be along the left side of the screen, among other options you may choose.
