Hi, I'm a new seller and recently received an offer way over the buy it now price for the camera I'm selling ($280 listed, $430 offered). My first instinct was that it was a scam, but their profile says they've been a member since 2004 with 100% positive feedback and recent positive transactions this month. Their phone number was included (area code matched location on their profile) in the offer so I texted them for clarification and they said that they submitted a high offer to show how bad they needed the camera quickly. They talk like a legitimate human being, so I replied saying I'd like to keep payment and everything in the eBay system for security and they haven't replied yet. But I wanted to consult the community before moving forward since there's a mix of red flags and reassurances.

If they really wanted it that bad why not just hit the buy it now for the $280.00
They only want to take it off eBay to steal from you. You would most likely get a fake pay pal receipt to your phone. If they really want it they will go through eBay and you will have some protections, take it off and you might as well kiss it good bye

They probably won't. This is a classic scam, and they want to lure you off eBay in order to send you some officially-looking but completely-fake correspondence, saying things such as that you've been paid, but must ship and upload a tracking number before you will see funds deposited in your account. That is not how real sales work, and of course no funds will actually appear.
As a new seller, you are a magnet for scammers. You might want to consider selling that camera locally for cash. If you do list it here, set it up as a Fixed Price listing only, for the price you want, with no Make Offer option and with the Immediate Payment Required checkbox selected on the full listing form. That way no one can snatch your item off the market without actually paying you for it first.
