Why would someone make an offer for asking price instead of buying it now? I'm confused. I fear I won't get paid for the item if I accept.

If you accept the offer, they'll try to get you to contact them off of Ebay.
A new seller, selling a $5000 pair of shoes is a prime target for scammers.

It must be for the $5K sneakers?? It's probably someone who will only try to convince you that you've been paid so that you'll ship the kicks. (I mean, really... who would pay that??)
How were you able to list these without going through the Authenticators?

Your answer is in your question. They made an offer because they don't really want to pay you for the item.
That is because they will later try to trick you into thinking you were paid so you will ship them the item for free.

As a brand new Sellee, $5k Jordans might not be the best item to start with.
You will have a payout hold and typically, e-Bay does not let a new Seller's 1st 30 days of sales totals be in that range.
Would suggest you end the listing and read more about selling here, category requirements, new selling parameters, etc.
Good luck! We were all "new" sellers once, but there are pretty strict parameters now for "new" sellers!

Take those shoes down now! There is no way, as a new seller, you are not going to get scammed. If you really want to lose $5K then just agree to send me $5K in cold cash. I will be happy to provide you with my Paypal address.

You are a new seller, you need to re-think your listings and remove those expensive shoes. You are a target for scammers. An item of that value should not be listed on ebay, let alone by a new seller with no experience. If any one asks you to "text" them or ask for your bank or paypal info, it's a total scam. Ignore and then block them.
You are better off selling those shoes locally or to a friend. Don't do it on any e-commerce platform. It is no longer a safe place for high dollar items.
Glad you came here to ask. So many do not and wind up losing $1,000's of dollars. An expensive lesson and not a good one.

2. Why are they listed in Baby Shoes ?
