Hi, I wonder of theres possible to list lets say a watch, under the guitars category, so i can benefit from the lower fee that is around 3-4% instead of 10%.
Or what will happen if i do? Also if i can’t, is there any way to get around it? Lets say i sell both a guitar plectrum and a watch in the same ad.

It's possible.
But ebay is pretty efficient about catching and booting fee avoiders, because they are stealing money out of ebay's pockets.

The odds are good that when caught ebay will pull the listing and send you a warning. They might suspend your account for awhile. If they catch you doing something shifty again, they would probably boot you.
I am getting the impression that you want to list and sell a high dollar item. Bad idea on an account that has little to no feedback. First off, scammers target new sellers listing high dollar items. Second - new sellers often have no idea what kind of seller protection ebay has - hint, very little. Do not think that no returns means no refunds.
AND I want you to take a look at the 10% fee ebay levels against the amount you will charge to ship the item to the buyer. That was the punishment ebay came up with to stop fee avoiders - charge everyone more money.
Also, if you list your item in the wrong category, the odds are good that almost no one will ever see it. ebay's search program will take a buyer looking for a Rolex or Timex straight to the watch section. ebay takes fee avoidance seriously.
None of us want to pay ebay's exhorbitant fees, but we do if we want to sell the item on ebay.

ive sold a watch lately on another account that had no feedback and it went well, how do you mean its not a good idea? What will they try to do and How can i avoid scammers?

Just add the 10% to the price of item, this way you'll pay 0 final value fee.

You can't. If a buy-uh-scammer wants to steal your item, they can do it. Fake payment messages, complaints about fake problems, asking for a return and sending back a rock instead of what you shipped are just a few of the basic scams. With the exception of the fake payment, which you beat by checking paypal to see if the money is there and they say ok to ship to the address on the payment - you can not say no, tough noogies, it was fine when I shipped it, ebay will take the payment out of your account and give it back to the buy-uh-scammer.
The higher dollar worth or demand the item has, the more likely it will draw the atten of scammers. Unless I have almost nothing in the item to lose, I will not list anything worth more than $50 on ebay.
It is a good idea to read a little on the boards and/or check out the ebay policies about buyer protections and then think about how they will effect you when you are a seller. There are nowhere near the same amount of seller protections.

Does adding a 30-cent guitar pick to a listing for a watch qualify that watch as a musical instrument? There are ways to save on fees but this would be obvious fee avoidance to ebay. Keep it above-board. Add your fees, shipping and everything else to your price. Good luck~
