I just notice that at least 2 items have disappeared from my inventory. The listings are not in unsold or ended either. I believe both items show variations as Fixed Price. Any suggestions?

@craf47 This isn't uncommon at all - eBay regularly drops my items - usually it's toward the 90 day mark when I'm ready to take them down, anyway, but often only at the 30-60 day mark. Every few months I gather together all the items that eBay has dropped (sometimes it's only a couple, once it was about 10) and relist them as new inventory.
My own personal theory is that it's a database event that occurs during updating and a certain amount of data is lost. You can sometimes find them online in aggregate sites like PicClick but I just relist as new listings.

Is it possible they were removed for violating some ebay policy?

No they were not in violation of policy

I called ebay and was told that any item that is not listed in a 60 day time period is dropped. Plus there is no way to know which items they dropped. I have 600 items in my inventory and have no idea which ones are still in Selling Manager Pro and which have been dropped.

This has happened to me way more times than I can count. They should not be dropping anything. I have unsold items sitting on BETSY from 7 years ago. Still Stored in Full Pictures, Descriptions and all.

I strongly recommend sellers do random stock checks of their items. I found countless times items I listed that have dropped off ebay. They also known to relist sold items so you have to really check the stock is still listed, especially for larger volume sellers.

Yes - or if you have Selling Manager they stay for 90 days, but you can tell when they're ready to go - at least mine, the photos drop first, then 24-48 hours later the listings disappear. Items that ARE listed should never be dropped, but they can be dropped anywhere between 30 and 90 days.
Yeah, I've had the 'ghost' listings, too - one was a mouse that I sold and then a week later the same mouse sold, and I KNOW I did not accidentally relist the mouse. This has been happening for years, eBay takes no responsibility but gives us a big black mark for canceling orders. Thing is, that mouse was not in my store, because at that time I only had a very few, so there's no way doing an inventory check would have done any good, it relisted on the site itself - again, I blame database futzes which would be consistent.
ETA: Agree - Inventory checks are important for catching those items that have been running and were dropped, though. I've been going through my racks pulling sales and finding this item or that item and think "I haven't seen that in my store lately" and sure enough, a good 20% of the time it is because it was dropped.
And yeah, Etsy keeps your stuff forever. So does Poshmark and Mercari.

Who has time to police the company we pay well to advertise. Plus the time it takes to relist... This is not sellers fault

Thank you - I was going to ask if she didn't know what the items were how she knew they were not in violation of policy.
