It allows me to create a variation called "character" which is just a matter of checking a box, but when I try to 'create my own' under that heading (after giving me a LONG list of characters I don't need) it claims MY selection is "invalid".
How the heck do I get it to accept that MY character isn't on their long list?

I have a lot of problems with variations as you're describing when I use sell similar. Always start variation listings from scratch.
Assuming you're already starting from scratch I can confirm that I've seen a lot more pre-filled attributes lately. I think it's a precursor to readying some categories for the catalog.

I'm not sure I'm understanding your problem correctly. Are you saying that when you create the attirbute "Character", that it won't allow you to use a "create your own" option... but it only just has the choices "male" and "female"?
If I'm correct in your issue... what error do you see when you try to click on the "create your own" link in the options section? FYI, there is a long time glitch that I think is still around in which that "create your own" link is completely gone. Let me know if you have that... there is a small work-around to that.

Try doing this (I haven't done this work-around in a long time so not sure if it still works).
Remove that "Character gender" attribute by clicking on that X. Then submit to get out of that Variation editing page. Don't click cancel or back, you need that revision to apply itself.
Then go back into the Variation editing page. That "character gender" attribute should be gone. Then try to "create your own" attribute as "Character." I used to do this in my clothing category in regards to "color" and "size" attributes that were already there by default.
