I struggled for an hour trying to figure it out and felt dumb when I did, haha. Here's how:
They say, "In the upper right corner of the search results, select Customize from the View dropdown menu."
For the life of me I could not figure it out! Then I realized that the upper right hand corner button is nothing but three dots and dashes. When you click on the dots and dashes, you come up to the "Customize," which is a little gear icon.
After you click the gear icon, the window will pop up for you to change currency settings in display results.
Finally!
I figured out how to change displayed currency!

If you're logged in on ebay.com the price you see should be in dollars since it's the US site. I wouldn't think it could be changed, but I could be wrong.

General reply...
The 'convert prices to US dollars' is the default but if it is unchecked, listings that were done on another site but that ship to the US will show on the main search page in the original currency. As far as I know, that's the only view currency option.

The three dots/dashes is a standard metaphor in software. The Chrome and Firefox browsers both use it:

If you list here on dotCOM, the asking price will display in USD.
If you ship to Canada, and I find your dotCOM listing on dotCA, I will see the asking price in Canadian dollars in Search and in USD plus Canadian dollars on the actual listing.
If you want to sell in Euros, you would list on a European site, like dotDE or dot FR.
Then the US buyer using Search would see your listing in Search in USD but on the actual listing, she would see the price in both euros and in USD.
It doesn't matter where you are or where you are registered, you can list on any eBay site, although you will be required to price in the national currency of that site and to ship to that nation.
