Everywhere I look (eBay's help pages, community pages,...) state to go to the Active tab and tick the box next to the listings and then select the option from the dropdown box.
There are no such boxes to tick/untick next to items in the Active tab and the drop down next to the item (where it shows Sell Similar) doesn't have the option either.
Other posts state to use an Advanced Selling Tool for listing/revising the item, but I cannot see any such option anywhere.
How can this been turned off for certain items?

Did you get those instructions from the US help pages or the UK?
It might work a bit differently for .uk so I suggest asking there.

Go to Active Listings (in Seller Hub) - Bring those up into view.
Header Row at the TOP
Click the box at the top that says "Edit" - it will check/select ALL listings.
At the same top header row area (Edit, Sell Similar, Actions......Select ACTIONS)
In the drop down box under ACTIONS
Choose REMOVE AUTOMATION RULES
It will have you confirm to remove the GTC status for the listings selected so they will not auto-renew. Good luck!

Mine doesn't have that option under my 'Actions' drop-down. I even checked 'Edit Fields/Duration' and found this: "All fixed price listings, except Motors Vehicles listings, must have a Good 'Til Cancelled duration." But I'll tell you my workaround...
I make it a point to call up my Active listings every morning, filtering by 'Ending today'. If something needs it, I just end the listing. I know I haven't answered your question... I usually just think outside the box till something works. Good luck.

It doesn't have it because this isn't about stopping a GTC Fixed Price listing from renewing.
The OP only has Auction listing so they are talking about the auto-relist of Auctions that end without a sale. On .com it used to be a pre-selected option for those using the simple listing form.
I'm not sure that option even exists anymore on .com which is why I suggested the OP check in the UK where their listings are done.

You have to check the Actions/Edit box to select all listings. Using the Header Row Across the Top

The other suggestion I got from both UK and US community pages. I didn't realise I had posted the question on the US community site; I've now re-posted it on the UK community site instead.

None of those options exist on the Active tab that I see (there's no header row in this tab where you can select/deselect all; that's only in the Sold tab and a couple of others).

The OP has no listings showing and none under sold. The OP does not state in their OP what type of listings, only that they are referring to using the Active tab.

Because all my listings are on .co.uk, you can't see them on .com.
All my listings are auction listings though.
As already mentioned above, I've reposted my question on the UK community site instead now,
