Ever since this new eBay update, all my store settings have been messed up. I've managed to fix everything via bulk editing except the handling time for my listings. I did try following the eBay instructions but the "Handling Time" option doesn't appear on the dropdown menu. My handling time was mysteriously changed to 7 days instead of 2 thus affecting my sales very much. Is anyone able to help me out or provide updated instructions? Thanks in advance!

Go to your "Shipping policy" page.
Click "Edit" on your default Shipping policy that applied on your listings.
Then choose your "Handling time" that you want.

Are you using Business Policies? If so, you can bulk change the handling time there.

No edit button exists even when I tried a search for it.
