The buyer won the auction on Friday evening. I haven't got a payment or any messages from the buyer. I've been busy too so I haven't sent an invoice or any messages either. How do I handle this?

after 48 hours you can open an unpaid item case and close 96 hours later

You can open an Unpaid Item Dispute 48 hours and one minute after the listing ends.
You then close it 96 hours and one minute after you open it.
You get your fees back, the "buyer" gets a strike and nobody gets to leave feedback.
http://pages.ebay.com/help/sell/unpaid-items.html
2 or more Unpaid Strikes will make it difficult for a buyer to purchase anything from sellers who have their Buyer Preferences set correctly,
By adding buyer requirements to your listing, you can stop members from bidding on or buying your items based on certain criteria. You can block buyers who:
Are in countries you don't want to send items to.
Have a negative Feedback score.
Have unpaid item cases recorded against them.
May bid on several items and not pay for them.
Don't have a PayPal account.
Have breached eBay policies.
To add buyer requirements:
Go to Site Preferences in My eBay.
In the Buyer Requirements section, click Show, and then click Edit.
Select your requirements, and the click Submit.
If you don't want to sell to certain bidders and buyers, you can put them on your blocked list. They won't be able to bid on or buy your items unless you remove them from the list. You can block up to 5,000 users.
To add people to your blocked list:
Go to the Blocked bidder list page.
Enter the username(s) you want to block, and then click Submit.

You can open an unpaid item case in 2 days, and you have up to 32 days from end of listing to open the case.
How long you wait in that 30 day window is up to you.

Do they have any active bids for your current listings? If so, I'd just leave it alone for a few days.
Although it would be great if all buyers would let us know if they were going to be waiting to pay because they want to bid on your next bout of auctions so they can save on combined shipping costs, not all do.
Because you are offering several auction style listing which all contain the combined shipping blurb, I might be inclined to add an 'expected payment timeframe for combined shipping' blurb.
A seller I used to buy a lot from would allow at least 3 weeks for payment because of combined shipping discounts.
You could always wait and see until this next group of auctions is ending (3 1/2 days to go); or
You could shoot off a quick message to the buyer and see if they respond - Thank you for your winning bid. Your item is packed and ready for shipment as soon as payment is received. Please let me know if there will be any further delay.
If they don't respond in 24 hours, I open an Unpaid.

Easy fix ,, send an invoice . Also if you already don't do this ALWAYS make it clear in your item description how and when you expect payment . Tulips

That right there..... if you don't state when you expect to get paid some buyers will assume you don't care or will wait until pay day.... or whatever. Personally I don't care, I will wait.... Often buyers will pay when they get paid on a Friday or the 1st of the month or whatever.... and the number of NPBs I have in one year, I can count on one hand, less then 1/2 of 1 %. I usually wait a week to 10 days before I even file a NPB..... unless it is something that is time sensitive or may fluctuate in price.... but then I inform the buyer of my expectations in the listing. In my experience those not paying you never hear from....
There was never yet an uninteresting life. Such a thing is an impossibility. Inside of the dullest exterior there is a drama, a comedy and a tragedy.
