This new format that eBay changed to today has no option to choose my listing time. Where did it go? My listing defaulted to good until cancelled and I see no option to edit to a 3, 5, 7, 10, 30 day listing.
I can't stand this new format to be honest.

The time on GTC listings can not be revised. You have to physically end each "Good til Cancelled" listing.
Or to bulk edit:
They will then go into your unsold box. From there you can select up to 500 at a time to relist. When you get to the bulk relisting stage you click on all that you have in the area and then select "Edit" and then "time" From there you can make them all 3,5,7,10 or 30 day listings.

As @emerald40 has said. GTC listings can not be edited for duration. You need to end them then relist them in one of the duration options available. Also GTC is not a new format?
Maybe you are speaking about the Seller Hub? To end listings in the seller hub

I didn't even get to choose a different set of days. The new listing page that went active today has no option that I can find. Is there anyway to create listings with 3,7,10,30 days like you used to be able to or will all buy now listings automatically be good until cancelled?

My new listing is scheduled, not active and never had an option to choose. This new listing format sucks.

Not sure how you are starting your new listing but generally the duration option in the listing form is the next option right below the description. Under the section called Selling Details. It should be the first option in that section.

It used to be there but there is a new listing format that just went live today. No option to change. Everyone replying please try a new listing and you will see a new format.

My directions were based on the listing form found in the seller hub. I start from Listing / create listing in the seller hub overview page.

I called into to the help center and somehow my account changed to the quick listings option which took certain options away but now that I am back to the advance listing options things are fixed.
