I have a lot of little cars I want to sell but don't want separate listings. How would I set up one listing?

If they're genuinely the same thing except for the color, that's a perfect use of the Variations feature for listings.

It's a variation listing. The option is at the bottom of item specifics to take you to learn how to do it. For me it's easiest to find a listing I want to copy and elect sell now from it.

Customers hate variation listings due to the horrible overall experience using them, I won't even click on them anymore, the variation one wants is always either sold out or priced way over market, and many sellers seed each variation listing with a garbage variation at a much cheaper price in order to rank better in search by price (like all the t-shirt vendors who have a $3-$4 variation of a photo of the t-shirt graphic instead of buying the shirt).
It doesn't matter if your listing isn't like that, all the listings that are like that have spoiled them for all sellers.
Also, many customers are somehow not smart enough to select an item from a drop down box.
You will get far more sales if you list each color separate.

As noted in a previous post, the Variations setup field is below the Item specifics field. You should see this. Click Edit to get started.
If you do not see the Variations field, scroll up to the top of the page and locate the three vertical dots. Click on the vertical dots and next click Settings. A popup will open, slide the toggle switch next to Variations to the on position. The Variation field will now show up on the listing page.
ETA: As far as I know, variation listings can only be created on a desktop, the app does not offer variation listing creation.

Variations listings are as common as dirt on all ecommerce sites, on a Marketplace like eBay or a single seller site.
Yes it can be frustrating when you go to a listing that includes multiple sizes or colors and the one you want is sold out but that is no different than going to Walmart to buy a pair of jeans and after going through what is on the shelf find that your specific size is not there.
The one that irks me is when there is a "sale" and while all the variations are available only XS or the ugliest color is part of the deal.
