Hi,
Can anyone tell me please how I can enter the EAN-code of a product in an Ebay listing.
The only option I see is a field for a UPC-code, but that is different; i mean UPC has 12 charcters and EAN has 13.
I do not see of field to enter the EAN-code in.
I am in Europe and sell on Ebay.com.

To answer your question: In the item specifics section of a listing, go down to the very bottom of that section and click on "Show More". Then scroll down even more and click on "Add Custom Item Specific". You can enter any item specific Name and Value there and save it.

I alredy thought of creatng an EAN-field but was not sure if Ebay would count that as a field to identify an item, such as the UPC that is already there, created by Ebay.

Yes, eBay counts that as a field to identify an item, just like the UPC field. That's the whole purpose of the Item Specifics section - to help a potential buyer to identify and locate an item during a search.
If you don't want a potential buyer to see the EAN, don't add it. But an EAN is pretty harmless, so why not add it if you think it may help a buyer to locate your item? ... Am I missing something here?

So, once i created the EAN field and put the ean in it, should I enter 'does not apply' in the UPC-field?

No, just leave it blank. Entering "does not apply" is not necessary in any of the fields that are optional.
