So i want to take one of my listings offline for a while because I'm getting too many orders in a short period of time and its not fun .
i just wanna know if there a way to save it as a draft until i publish it again. I just don't wanna lose the how many i sold counter . Or is it inevitable ? like you take a listing down and when you relist all the data get reset ?

You can just end a listing at any time and it will remain in your Unsold section for 90 days and you can relist it from there. However, the relist will show zero sold.
A better strategy is to use the "Out of stock" option that is available in your site preferences. When this is activated, your fixed price listings that sell out don't end. The listing will stay active, with zero available, until the seller revises that quantity. While it has zero available, it is hidden from potential buyers and doesn't show up in searches. If a member does track it down (such as through a bookmark or on their watch list) they still won't be able to buy it. Then when you revise the quantity, the listing shows up again and since it's a continuous listing, the total Sold still shows up.

Unsolds will only remain for 60 days not 90. I sadly discovered that the hard way.

Really?
SMH...
They're selling custom (digital) items with a fast turnaround. A longer handling time is usually a good idea for made to order items.
They're breaking all kinds of rules with their listings - from location to category and more.

Once you're opted in to managed payments you won't have a choice unless you stop selling here.

The items you are selling are not supposed to be sold.
You'll probably end up with a bunch of closed accounts and unhappy buyers.

and "sell similar" can be used to create a draft to save without actually listing anything. Drafts can be updated from time to time so they do not time off. Does not save any of the sold/watch data.
