if you go to "Marketing" tab on seller hub, select "Promotions" the coupon you created or markdoawn sale will be listed on the bottom, you can go in and edit the coupon but somethings can't be edited once it's created, if they don't let you edit the selected categories you can select to end the promotion. Unlike Markdown Sale campaigns, which you cannot end before first 24hrs after creation (you can only pause the sale), Coupons you create you can end anytime.
When you create a Coupon you can select what categories to include in the coupon, but because you don't have a store on ebay you can only use ebays categories you filed your listings under when created them...if you have a store you can select your own store categories which is often easier and more organized then ebay's categories.
