Is it acceptable for me to ask for a review of my first listing with variables before it's live too long to see if it shows correctly?
Between the choice part and, I swear, three times I did revisions, I got three different listing pages!
If it's ok to ask, this is it.

Everything looks very nice. Bravo! However, being a new seller I'm going to give you a heads up. Don't be surprised if you get some sport bidders that won't pay or scammers asking you to text them. New sellers are sitting ducks for both. If you want to by pass this behavior, avoid auction style listings with best offers and list all your items at a fixed buy it now price with immediate payment required checked off. Sport bidders and non - paying bidders steer clear of these listings as they must pay instantly. Good luck with your sales.

That's a variations listing, set up correctly. You should avoid the word "choice" because in the eBay context it is used differently and is not permitted: A listing where the buyer doesn't have the explicit variations choice but has to tell the seller which item he wants from a collection of options.
By showing both items in your Gallery image, you run the risk of a careless buyer expecting to get both items. Many buyers just look at the pictures and don't read the Description carefully, if at all. I would have listed them separately. Especially since your listing title starts with "2 Colors." Maybe a better title would be "14 Yd Extra Wide 7.5" Embroidered Crochet Style Lace Trim Choose pink or blue". Your current title doesn't specify the colors so your listing wouldn't show up in a search for either of those colors.
Finally, it could be useful to have another image, which shows a ruler laid across the trim to emphasize how wide it is. I would have also included an image of the entire 2-yard piece, rolled up.

Looks and works fine for me.
Right now it's showing a quantity of 1 each.
Congrats! I had the hardest time with variations listings when I was learning. Looks like you got it.
I might change the title.
