In the "return metric" they are all counted regardless of what you do about it. They are counted simply because they happened. You must have a "very high" rating compared to your peers in order to get put in final value fee punishment camp.
It is the "requests" that they are counting. Actually, it is my opinion that when they changed to term from "case" to "request" it in reality was the exact same thing. "Escalate the case" was changed to "ask eBay to step in and help". The process is essentially the same, just different words. Sort of like putting lipstick on a pig.

well in the olden days they just made you "not a registered user" and you could not sell.
So buy going with he higher fees they give you a chance to correct what even is going on with your sales.
You chose shipping methods: you choice how items are packed etc. Its all on you.
Also you sell old electronics which is a target for such returns.
Worse is the no returns they may be hoping you are not willing to spend the cost to have an item returned as well.
No returns any more seem in certain areas; to increase item not as described cases.
Not much I can advise on how to correct what happens these days in areas of such behavior.
And yes of course eBay is now making more money off of you.

A performance defect is a case closed without seller resolution or an out of stock cancellation. Those can be found on your seller dashboard here.
A service metric (link 1, link 2) hit/mark/ding/whatever you call it is a totally different system for measuring a seller and that's the system that's resulting in your extra 5% fee. The fee shouldn't be hidden - eBay would have sent a message notifying you. You can monitor your service metrics here.
Most of us have hits to our metrics that are the result of false claims and there's not much we can do about them. Sometimes sellers hit bad luck with a string of scammers.
Six damaged in shipping out of approx 350 pkgs is a pretty high ratio. That's one area you should be able to make adjustments and gain some control to prevent your SNAD rating from growing exponentially.
