I am planning to pay for the Starter subscription to upload the 100 listings allowed, but if I stop paying the subscription will eBay remove them to return to a normal account? even if they're fixed listings (and not auction)?
Does eBay remove the 100 extra listings after I stop my subscription?

"stop paying" or cancel the store?
When you sign up for as Store on a monthly basis the moment you sign up you have the Store and the listings and you pay the monthly fee. If you cancel the Store a day later you will still pay for a full month and of course any listings made during that month will continue as normal.
Into your life it will creep

They won't be removed but when they renew there will be an insertion charge for each one for that month.

If you cancel your store subscription the 100 fixed price listings will stay active until sold. Remember the listings will automatically renew each month until sold, even if you cancel your store subscription, and fees could apply.
Note: If you think you will cancel your store subscription, I would suggest choosing a monthly (not yearly) subscription to avoid early termination fees.

A Starter store subscription doesn't get you 100 listings; it gets you 100 free basic insertions per month. Just as a non-store seller gets 50 free insertions per month, a Starter store gets 100 (but with restrictions on which categories can be used for free auction-format insertions). Just like any other free insertion, what counts is the moment that the listing goes live. Once the listing is active, it is not affected by your store status.
The minimum commitment for a store subscription is one full calendar month plus the balance of the month in which you sign up. The cost of the first month is pro-rated based on the exact number of days. So if you sign up today for a starter store as a month-to-month subscription, that's a commitment of about $10.

Signing up for a Store has no effect on your seller limits, either total value or number of insertions. New sellers often have strict limits which would make a store not a cost-effective investment.

Hi, if you are a new seller, you may be subjected to limits on your account. And since you are in Malta, eBay will want certain information from you before they will let you list. You might have to establish your identity and the like.
You might not be eligible for the 100 listings as a new seller. New sellers are generally given 10 listings a month or $500 in sales. Your situation may be different.
Can you clarify what you mean by stopping payment for the subscription?

Oh now I realized from all your comments that I still won't be able to sell 100 artworks, because yes I am a new seller and can only sell 10 items right now, and it's a pain in the ass because I am selling prints of photos and have almost already reached my limit.....

Your limits will be increased once you have demonstrated that you can complete your transactions and flfill the sales without issues. But I wouldn't worry about the limits right now, until you start making some sales. I'm afraid that photos are not big sellers, so it may take a while for you to have enough sales to make subscribing to a store cost effective. Without a store, you get 50 free-insertion-fee listings each month, so until you are close to having that many sales each month, a store wouldn't help.
If you want to offer more choices, you could put a lower quantity available on the listings so you can post more listings.
The way a store works, you have to keep paying for it each month or it won't do you any good. If you end the subscription and stop paying for 100 (or more) each month, then you will go back to just having 50 free-insertion-fee listings each month.
Fixed price listings renew every month, on the same numbered day each month as they were first started. Each time they renew, it uses up one of your free-insertion-fee listings, or if you don't have any more then you are charged an insertion fee for each listing each month.
